Does anyone know where the data for each program are stored? It would be
nice if I could rename some of these pinned URLs, or add them without
having to wait for it to decide I've visited them often enough.

According to
http://www.techspot.com/guides/363-windows-jump-lists-fix-and-tricks/
the "jumplists" are stored as binary files, one per application. That
page gives a link to "Jumplist-Launcher" which purportedly provides a UI
for modifying the lists.
