I can't seem to find the answer to this anywhere.

Occasionally I receive an email from someone I know. Usually it just says: from [email protected]

But occasionally, from the same exact person/email address, it says: from <[email protected]>

Why is it sometimes enclosed in greater than/less than and other times it isn't?

At first I suspected it had something to do with maybe it being a known contact or in the address book, but this is not the case. I recently received an email from a long time friend (a reply, at that), and whereas their name previously was not enclosed in brackets-- this time it was.

Upon reviewing the headers I saw that they must have emailed me from a different/new device. The originating IP address was different than usual.

Any ideas?
