Sorting is still available. From the menu, choose View > Sort By, and pick the criteria you want to use. I have messages sorted in order received, descending order, threaded.
In both the folder pane and the list pane, I see a little icon at the right edge which allows me to choose which columns to display. What theme are you using? That icon should be there.
