You probably changed a setting/pref inadvertently.
1) Formatting requires the use of HTML. If you compose in plain text,
you'll get no formatting. So be sure to hold down the Shift key when
clicking the "Compose" button on the toolbar, or else click the down
arrow at the right edge of the button and choose "Compose in HTML."
2) Assuming you /are/ sending in HTML, check your settings under
View | Message Body as... Original HTML/Simple HTML/Plain text/All Body
Parts. An HTML message displayed as plain text will look like it has no
formatting.
