Probably what's showing up are printers that you've actually printed to from from Seamonkey.
For printers that don't show up in about:config (actually, the underlying prefs.js file), it's probable that you've not printed to them from Seamonkey.
My own profile is years old, and I have a number of printers there that I may have printed a handful of pages to, that I'll never see again. I need to go through the profile and delete those.
