I handle anonymous donors with a field I created called "Recognition Listing."  The 
purpose of the field is to record how people want their gifts recognized in
publications (this is something people can be very particular about).  If they wish to 
be anonymous, I put "anonymous" in the field.  When I create recognition
lists, I use this field to generate the list.  With this method, I don't lose the 
donor's identity while maintaining the confidentiality of their gift.
