Jack Noll addressed pretty much the same question in an email on July 11th.
I've pasted his answer and the original question below. In sum, you can't
do any of the "master" level customization using the trial version of
FileMaker.

This question came up back in March of 2000 with the trial version of
FM5. Here's what I posted then; my guess is that the same applies here:
- You *can* open ebase with the admin and user passwords and get the same
functionalities that these passwords allow under FM4. So, you can see the
screens, run reports and enter limited amounts of data. You can also try
out the Table View and the Define Value Lists enhancements.
- You *can't* open the ebase files with the master password and get access
to the customization features (layout mode, define fields, access
privileges, etc). In fact, with the names_.102 file you can't even view
the screens (you get "Access Denied"). This appears to be a function of the
fact that these files were originally created as runtime files under
Filemaker 4. There doesn't appear to be a way around this. Rest assured
that you DO have access to all of these features if you're running FM5
instead of the trial version.
That's what I've been able to determine. My guess as to why it works this
way is that FM wants to protect their runtime developers (otherwise, you'd
be able to modify our application without ever having bought a license for
Filemaker). This makes good sense to me.
