We had added matching, grants, and memorials, and our entries didn't show up in the "View Payment" screen....

Yep, by adding values to the value list.

Not sure where you looked. There is a value list in the payments file
called Pay Method List that contains the values for this popup list.
Value lists are local to each file - this one is stored in the
payments file. If you looked for this list on the Admin screen option
where you can edit value lists, you won't find it. That set of lists
is in the names file. To get to the pay method list you need to be in
the payments file, logged in with the master-level password, and
select the menu item File>Define Value Lists.
