I've used Gigabit Fiber and Copper Broadcoms .. They work great.  

Even the cheap 10/100/1000s switches autoswitch between different speeds
on different ports. So you just keep them at 100.

I guess that depends on if your Gig switch is 10/100/1000 and if you're
happy with 100Mbit going through the pfSense box.

Yes, Intel gig nics work just fine.  There are others, check
