If the IP will not be involved in any of the traffic, am I able to use an IP 
that is not even being used on the bridged subnet? For example... I have a /28 
block of public IPs from my ISP. Am I correct in assuming I can assign a 
private IP to the WAN and still have my public traffic bridge through to my 
OPT1?

You can assign however many IP's you want, but in a bridge you only want 
one IP on the WAN as it won't be involved in any of the traffic. Just 
need an IP for management purposes.
