So you learned that documentation is vital, backups are as well (so you could replicate the system without taking it down), oh well, many people forget those steps ;-) You could boot off from different media and perhaps load the slices and clear the contents of it, you need to be familiar with booting from e.g. a livecd, and using mount, chroot, and the password changing tools.
