You can not transparently redirect https traffic to the HTTP proxy.

You can use a HTTP proxy for HTTPS sites provided you configure it manually in the browser, not using the transparent option.

Basically, just block outbound port 80 and 443 traffic. Setup a wpad host to advertise the proxy server on the pfSense machine.
Set the client PC browsers to "Auto detect proxy settings".
