In a previous installation (Debian), I was able to enter and display accented characters at the console with, for example, something like "Ctrl-. 'e" for small e with acute accent. I was also able to load different vga character sets with "setfont", and used it to load a character set created in DOS. I don't have this set up right now, and forget the details, but I know that there are one or two HOW-TO's that I consulted.
