Nick, I have added memory to Compaq boxes before and in all cases have had to force the SETUP screen (BIOS CMOS setup) to display (usually F10) after the new RAM was installed.
It would report a memory size error, then set the reported size to the new memory configuration. After the next reboot, the memory would be correctly reported to DOS. If you haven't yet discarded the RAM you were using, you might try this. See also comments inserted below ... I think you're running something that sucks up memory and doesn't release it properly (i.e. a memory leak). What are you running on this box?
