embedSWF() is what most people will use - It is a 'higher level' function
which covers most needs for embedding a swf.

As the docs say createSWF() is 'low level' method will primarily be useful
when combining it with other JavaScript libraries. Another common usage is
if you are doing something like dynamically attaching and destroying swfs
in the same 
container<http://demos.learnswfobject.com/load-onclick/onclick2.html>
.

Unless you are doing something funky, embedSWF() should be good for you.
