With regard to the fonts, you can get information about their size,
position, and font names by using pdf2text from pdftron.com ($250 USD)
that gives output like x, y, width, height, font, rotation, font size, word:

Not that I know of, though I can see no reason why it could not be
done by
replacing one object with another.
