Aside from the Bibles Michael Paul Johnson linked to (the OSIS ones anyway), you can find a number of good XML Bibles & biblical material at the following:

Or you can use CrossWire's mod2osis utility to convert Sword modules to rough OSIS XML documents.
Importantly, you should try to use the OSIS format since it is the only well-developed XML Bible format with any degree of acceptance. XSEM (which Michael mentioned) helped the development of OSIS significantly, but is no longer advocated by anyone and really has no content other than Michael's. The Zefania format is not really able to encode the complexity of Bibles and isn't advocated by anyone but its own developers.
