Sorry, but I do not see the need to remove helpers.  The only place I see this 
being a problem is because of performance, but if that's a problem, then your 
entire application is going to slow down!

If you need to override helpers, just place the appropriate helper file at 
either the project, application, or module level, and symfony will take care 
of the rest.
