I don't see the sfWidgetFormGMappable() in the sfEasyGMapPlugin SVN
can you share it ? because i don't see what he do.
that i see it's y a you had a new array in form values for storing  
unsetted  fields,  but this solution need a PreValidator for
moving$taintedValues['gmappable'] values to $taintedValue and the both 
PreValidator and widget need to be configured.

its a solution perhaps not the best one but a solution.
