That would have sense only for "module" plugins, and the interesting part of Symfony plugins is more how they are configurable than how they "look", so it's not often interesting to have a demo. At least it ensures that the plugin really works, that's true.
But I'm not sure for the little number of plugins concerned this would be more interesting to put it in a dedicated field than simply in the description...
