symfony2bundles.org actually indexes applications as well, not just bundles,
IIRC.

We're using Symfony2 at OpenSky <http://shopopensky.com/> and have a few
bundles from our closed-source website available on Github <
http://github.com/opensky>.  I know Pablo at ServerGrove is using Symfony2
for an internal project <
http://blog.servergrove.com/2010/09/30/upgrading-a-symfony2-application-to-pr3/>,
and elsewhere a few guys from knplabs (of symfony2bundles) are working on a
comprehensive backend for Exercise.com.  Most of it is closed source, but
some bundles are being shared as well <http://github.com/exercise>.  The
newly launched Symfony2.com website can be included as well, although I'm
not sure how big that is.

I think by and large, most of the "crazy" people using Symfony2 are also
active on this mailing list, so this is as good a place as any for
discussion.  As for best practices, I think symfony2bundles.org and Github
are good sources for keeping tabs on solid bundles.  Any bundles that are
being frequently updated with Symfony API changes and sporting solid unit
test coverage are probably a good starting point for your investigation.

A wiki might be helpful, but I feel it could easily get stale very quickly.
 The best method of documentation would likely be contributing to the
official Symfony2 docs, which have their own Git repository.
