As far as I know yahoo bookmark (with 20M users) and the new version of
deli.cio.us are developed based on symfony, though they have customized it.

In regard to your concern, I don't agree; That's actually why people choose
frameworks instead of CMS to be able to customize it to any level that they
want.

I myself have developed rather large websites that needed optimizations and
were able to easily optimize the # of queries and basically remove any
redundant ones.

Regarding symfony's website, I don't see much downtime but I doubt if it is
a symfony issue.
At the meantime you better have a local copy of askeet tutorial or symfony's
book on your computer.
