I should clarify my message slightly. We’re hoping to upgrade to Symfony 1.1.6 from our old sandbox versions.

You juste have to setup your symfony dir as external in the lib/vendor directory (to the last 1.0.x version). Then modify your paths in the config/config.php file. (+ replace/symlink/snv the /sf dir in the /web folder) For the 0.9.0-DEV i'am not sure there is an easy way to upgrade...
