I have ben using Gentoo for 2 years now.... super stable and always up to date with its php versions.
Granted it may be a bit difficult as a distribution if you are use to ubuntu, but I guess thats the price of being able to customize. If you need a easy start with gentoo try out Sabayon which is based on gentoo. Don't have experience with Sabayon as a server but I would suspect it's comparable to gentoo.
