I figured it out myself. Its very easy...
You just set the builder options in your Doctrine_Record_Generator
class
public function initOptions()
{
...
$this->setOption('builderOptions', array(
'generateTableClasses' => true,
'baseClassesDirectory' => 'base',
'baseClassName' => 'sfDoctrineRecord'
));
...
}
