here is my solution :

for each project:
- "php symfony doctrine:build-all-reload"
- add in all files "project\lib\model\doctrine\sfDoctrineGuardPlugin
\sfGuard*.class.php"

class sfGuardGroup extends PluginsfGuardGroup
{
  public function setTableDefinition()
  {
    parent::setTableDefinition();
    $this->setTableName('projectname_sfGuardGroup');
  }
}
- "php symfony doctrine:build-all-reload"

if anyone knows how to do better, tell me ?
