you might wanna override the "bind" method of your form by
public function bind(array $taintedValues = null, array $taintedFiles =
null)
{
$taintedValues['countries'] = implode(',',$taintedValues['countries']);
parent::bind($taintedValues, $taintedFiles);
}
of something similar...
