IIRC, I didn't want to do it for defined functions, but I think Brian was
adamant that it should be done that way.
Having diff_wrt only on undefined functions is also problematic,
precisely because it causes them to behave differently from defined
functions.
To me, an undefined function is closer to a Symbol than a function, so I
don't really see any issues with doing it that way (the current class
structure doesn't reflect this, but that's a separate issue).
