An easy way to do it is to get the speaker to run an application such as recordmydesktop on their computer, or a high-bandwidth VNC server. This footage can then be cut into the video where needed. A more expensive solution is to use a VGA-to-Component converter box along with something such as an Hauppauge HD-PVR which can record 720p. The first option is quickest and simplest, but the second may deliver better quality. It does take a bit more post-production work to weave the two bits of footage together, however the results are often worth it, IMO.
