Because sparse matrices are maybe for more advanced, whereas the
target audience of the tutorial is first users to SymPy. The aim of
the tutorial is to show users only those things that are important.
It can be hard sometimes to see what that is from API docs, because
they list everything, both common and esoteric, on equal weighting.

Plus, as you have seen, the sparse matrices are a little buggy.
