If I remember correctly, I had some trouble getting the GUI to create profiles correctly (or at least editing the profiles the GUI created). This may have been fixed since, but I chose to use the CLI instead. The configuration files are in .config/syncevolution, so that would be where the profiles need to be deleted. I recommend re-creating profiles with the CLI and using the CLI for troubleshooting, as getting the error numbers and such is a little less frustrating.
