I have a similar intension at some point with the server that is being 
implemented (if the problems I have found can be fixed).

a. In terms are raidz, you do no want one big raidz array for your data, raidz 
doesnt behave like raid5, it doesnt provide more iops with a larger number of 
drives, if you have 10 drives in your raidz array, it will perform the same as 
just a single drive, so you will get poor perfomance from the array for your 
esxi servers. If you want to have the maximum storage capacity with an increase 
in performance, you could raid 0 together the raidz arrays, this will give you 
more space then raid 1 arrays, with lower iops than a raid 1, but higher than 
just a raidz.

b. If you are doing raid 10 you could do hardware, but then you wouldnt get the 
advantages of zfs, interms of recovering from corrupt data. raid 10 would 
provide better iops, with ok reducency.

c. same as b

In terms of rebuild time i havent really got into that yet, but from what I 
have read it appears to be slow for some people and fast for others, in that it 
was using up no resources for some people, when they want it to use what ever 
is free, and then others have complained it is using up to many resources and 
it is slowing the server down.
