Today I got my copy of 10.1. It works nice, but you can read all
about that on the mac news sites.
What you won't read much about is how the beast communicates with older Macs.
These are so far my findings...

Connecting to AppleShare 2: the iMac running os x sees the system 6
server but doesn't want to connect because it doesn't support its AFP
protocol.
Connecting to AppleShare 3: Works perfectly.
Sharing the public folder on the OS X iMac with older Macs: under
appletalk so far a no go. Both a SE/30 running 7.5.3 and a plus
running system 6 won't see the iMac. Connecting the SE/30 via TCP/IP
didn't work either. So far anyway...
I haven't tried to connect the se/30 or plus to the iMac via ftp...
Should be possible though...

External usb floppydrives work now (they didn't with os x 10.04),
enabling exchange of data on High Density floppies. Zips already
worked in beta, and still do so.
