My reasoning is that payment:bitcoin=yes is a general tag which means that payment is accepted at the store.
In my opinion if there is no additional information then all the payment tags imply point of sale. Otherwise I would also have to tag a store that takes credit cards with payment:credit_cards=yes + payment:point_of_sale:credit_cards=yes
