interesting you see foot=no and horse=no as defaults for the majority of roads,
around here yes is clearly the default for these, with the exception of
motorways and very few other exceptions (e.g. certain tunnels and trunks).
Another tag that often doesn't get tagged is surface in cases of paved /
asphalt but recent discussion about the style considered making unpaved the
default for rendering (in case surface is not explicitly tagged).
