Sounds good. You can add a comment in the opening_hours value to allow to find
those values later if it changes.

opening_hours=Apr Su[1]-[-1]Oct Su[1] 8:30-17:00 ; Oct Su[1] -[-1] Apr Su[1] 
8:30-18:00

where [-1]Oct Su[1]  is the Saturday immediately before the first Sunday in 
October.

Cannot use Oct Sa[1]  as Oct Su[1] may be the 1st of October ... thus the first 
Saturday occurs after the first Sunday.

Not certain that this [-1]Oct Su[1] will work!!! Comments?

I cannot see other uses of Oct Su[1] etc other than for daylight savings time 
within Australia.
So I think that would be sufficient for finding them later if (when) required.
Adding stuff in quotes is 'free text mode' and might get displayed ... possibly 
confusing users/mappers leading to possible deletion by others.
Better off with a note if required.
