The options I'm referring to are (paraphrased):

1. Burn files without saving the files to disk
2. Do a test burn before doing the actual burn
3. Leave the CD-R open versus closed
4. Etc.

I just checked my Macbook Pro with versions Tails 1.3.2 and 1.4 ... it
seems
the options still don't show up once you depress the burn button in
Brasero ... I was able 
to get "burn without saving files to disk" to show up on a 0.x version
of Tails (circa 2013).

This may be a BIOS attack on just my Apple machines 2008 & 2012?
Something 
you all should be aware of as you do the programming ...

No, this was not intended.

What exact option(s) are you missing?

@frontdesk: the only recent related change I see happened in Tails
1.4:

    - Install cdrdao: this enables Brasero to burn combined data/audio
      CDs and to do byte-to-byte disc copy.
