Go to the "Receive" tab. It moves automatically to the next address
every time a transaction is received in an address. You can copy/paste
the address from the "Receive" tab => Receiving address and send it
where you want.

You can send from any particular address you want, if you don't want to
use Electrum's default coin selection. Just go to the "Addresses" tab,
select the address you want to SPEND from and right click on it, select
"Send From". You can select more than one address to send from if you
would like so (ctrl + click on each address, then right click and "Send
From").
