Both addr:postal and contact:postal have a little use according to
taginfo. Neither have a wiki page to explain their use.
Given the use of the key contact: I would prefer contact:postal and
document its use on the OSM wiki.
If you want more input/ideas then contact the tagging group?

I would suggest you have two options:
1) Ask on http://help.openstreetmap.org, and see if you get anything
useful. It would be a great question to ask, as I'm sure other people
come across similar circumstances, and getting an answer somewhere
public would be good.
2) Make up a tag so that the information is in the database, and if
someone comes up with a better tagging scheme, they can change it later.
3) Do both.
For (2), I reckon contact:postal='PO Box 2323, Blahtown' would make
sense in the context of the other contact:* tags. According to
https://taginfo.openstreetmap.org/keys/contact%3Apostal, it's been
used at least 175 times before, although maybe not quite in that way.
