It's just what Mapnik decides to show on its map, there are other renderings, like http://opentopomap.org/#map=15/51.00633/5.31934 that have special symbols for castles. The most detailed way of mapping a castle would be outlining the building contours, and then add the historic=castle tag on that building. It'll then show up on Mapnik since it has building=yes, but still no special castle symbol.
