Hi Joost, They are definitely horse meadows. On AGIV imagery it's even possible to make out their silhouettes/shadows. On Bing the irregular way the grass is eaten is a giveaway.

The tracks seem like a way to access the meadows to me and of course they can serve to ride as well.
