The Canvec data is going to be a LOT more accurate than the existing lake 
coastline data; it was all generally traced from low resolution satellite 
imagery.   So I'd definitely stick with the Canvec stuff.

I'm not 100% sure what happened with the Canvec data you uploaded, but it looks 
like the tags are missing from lot of the ways.  The wooded areas are not 
showing up because they're not marked natural=wood, and the watered areas are 
not showing up water because they're not marked natural = water.  I'd suggest 
downloading some of the areas in JOSM and comparing that to the original canvec 
tiles you were working with to see what went wrong.  If you need help I can 
download the same tile and take a closer look, but that's what I saw when I 
downloaded with JOSM.

The MLI buildings were downloaded from 
https://mli2.gov.mb.ca/t20k/index_seamless.html.
I have converted this data into a format that we can use with OSM.
I've converted the entire province and have been copying in the buildings as I 
import Canvec tiles.  If there's an area you are interested in let me know and 
I can clip it out of my buildings import file (which is 200MB for the whole 
file -- you can see why I haven't posted this :) ).  The primary reason I 
haven't cut the data up into small tiles and posted it is that I'm slowly 
clipping areas out of the big import file as I work; this way I can always know 
what is left to import without having to manually look at the map and see 
what's there and what isn't.  If there's some areas others want to handle then 
I'm more than willing to snip 'em out.  The building data seems pretty decent 
though.
