Field boundaries can be traced in this way, with the caveat that 10 years can be long time in terms of field boundaries (certainly what I've seen of the Bing data locally seems to derives from getmapping's "Millennium Map" and dates to the early 2000s. Still often better than the OS though...
I've certainly used Bing to fill in field boundaries locally, based mostly on what I can see from footpaths and roads. The sun angle of the coverage locally is quite low enabling you to tell hedges and fences apart in 90% of cases.
