I almost feel guilty for bring them up, but only almost because it has been illuminating. In mentioning them, apart from trying to be as open as possible, I was also thinking about how to be more specific about the type of brewery say, without introducing keys for every type of drink under the sun, i.e., allowing craft:brewery=ale;wheat_beer;fruit_beer, whilst still allowing a simple craft:brewery=yes. I've seen this approach recommended on the basis that it "limits entries in the global namespace".
