You can tweak/commit the Osmarender stylesheet yourself, and for the 'Mapnik' map, you can open a ticket on OSM trac. I told him to document the tagging on the wiki page (http://wiki.openstreetmap.org/wiki/WikiProject_Haiti/Mapping_Coordination) and then I could see about adding it to the Haiti map.
