There's plenty of "potentially life-or-death" data in OSM already. Map data is never exact, it's allways "good enough for a certain purpose". So go add your data, and let people decide wether it's good enough for their purpose. That said, I don't think that OSM is a great fit for general depth data. The main reason is technical : OSM is good for discreet (point) data but not continuous (gradient) data. For the same reason, we've got mountain peaks in OSM but not general relief data.
