There's plenty of "potentially life-or-death" data in OSM already. Map
data is never exact, it's allways "good enough for a certain purpose".
So go add your data, and let people decide wether it's good enough for
their purpose.

That said, I don't think that OSM is a great fit for general depth
data. The main reason is technical : OSM is good for discreet (point)
data but not continuous (gradient) data. For the same reason, we've
got mountain peaks in OSM but not general relief data. People generaly
use SRTM/ASTER instead.
