Hi Tom. If there are no realistic borders visible on the ground then I recommend one bounding area amenity=school with no name. Instead add the specific names on the buildings (and building=school). If buildings joined /shared then I think make your best guess at splitting them. Multipolygons can be used to share edges for editors comfortable with them.
I came across the same problem with three schools in the one grounds, two of the schools in a joined building.
