Here they're building one and calling it a "mountain bike park". I think I'd use leisure=park and map the trails as (presumably) highway=cycleway surface=dirt foot=no. A more specific tag should probably be a subtag of park. On the other hand, we have leisure=dog_park, but that's generally a fenced area inside a larger park.
