Charles is a great tool for watching traffic also.
We use it to keep track of Flash or Ajax talking to the backend PHP
via xml, name/value, or amf formats.

So you can really sneak in small debugging tools on your own. One
thing Id love to see is generated EXPLAIN output from MySQL traces
for a page somehow.
