As far as the iPhone goes, you can join our weekly phone conference to learn how to use it. It happens every monday evening. go to ibugtoday.com for details or write me privately. Books on iPhone can be purchased from National Braille Press in .brf Doc or Txt formats.
They are geared toward blind people.
Many of the O'Reily books are available on bookshare.org. I know that this is not a total solution but it may help.
Also check out applevis.com for articles, blogs and podcasts.
